Choc Chip Banana Pancakes

Sugar was omitted due to the natural sweetness of the ripe bananas and the choc chips. If desired, replace choc chips with sugar.

  • 2 ripe bananas
  • 1 cup milk
  • 2 large eggs, lightly beaten
  • ¼ cup oil
  • 1.5 cups plain flour
  • 2.5 tsp baking powder
  • 1 pinch of salt
  • 2 tbps sugar (optional)
  • ¾ cup choc chips
  • 1 pinch of Pride of India Cinnamon Powder

  • Sift dry ingredients: flour, baking powder, salt, Pride of India Cinnamon Powder and sugar (if using). Mix well and set aside.
  • In a medium bowl, mash the bananas. Add milk, eggs and oil. Mix until combined.
  • Add the dry ingredients and mix until smooth. Set aside for about 10 minutes.
  • Add choc chips and fold into batter.
  • Heat a lightly greased pan over medium heat. Scoop approximately ¼ cup of batter onto the heated pan.
  • Cook on both sides until golden brown.
